In this year our company has finished another interesting project in the
cooperation with Dutch firm BVT Bakery Services that supervised the
delivery of the complete production line.
The outcome of one-year
joint development was the assembly of the new high-temperature oven PPP
1,3 10,4.225-HT,D with remarkable output 1 000 kg/hour. During 2016 the
trial testing run was carried out in Netherlands, subsequently the
assembly was then finished in Teheran.
The oven is intended for
baking Iranian bread of „lavash“ type that gets its characteristic
rectangular shape even after the finishing of baking by the manner
so-called „breaking“ from the pre-arranged perforated stripe of dough.
This dough stripe of width 1,3m and just 1 mm thickness is baked at high
temperature 420°C during only 20 s. To achieve such a high temperature,
14 burners are used and they are built in the baking space of the oven.
One
of the main requirement for the development of new type of oven was to
separate the flame of the burner from the baking space to assure high
quality of bread. Each burner transfers its heat into its own
heat-exchanger that is warmed up to red colour and thus it ensures not
only convection heat but also radiant heating. Radiant heating runs
mostly in infra-red spectrum that penetrates even faster into the core
of the product. The result is the shortened baking time and undried
surface of the product.
The used conveyor is also one of the
interesting things. The conveyor consists of cast iron plates 160mm wide
with high thermal accumulating feature. Each upper side of single plate
is perforated with dozens of thousand small holes and thus it creates
unique pattern on bottom side of the baked bread. The integration of new
system for heat transfer and baking on cast iron plates made possible
keeping high quality and performance.
